/&gt;&lt;ul&gt;&lt;li&gt;gr. 200 di acciughe sotto sale,&lt;/li&gt;&lt;li&gt;prezzemolo,&lt;/li&gt;&lt;li&gt;1 spicchio d’aglio,&lt;/li&gt;&lt;li&gt;1 peperoncino piccante,&lt;/li&gt;&lt;li&gt;olio, &lt;/li&gt;&lt;li&gt;aceto. &lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Preparazione&lt;/p&gt;&lt;p&gt;Pulire e dividere in filetti le acciughe, dissalarle, lavandole con acqua e aceto, poi asciugarle bene e disporle su un piatto da portata. Quindi, pulire il prezzemolo, eliminando i gambi, e tritarlo finissimo assieme a uno spicchio d'aglio. Aggiungere al trito l'olio e, mescolando con la forchetta, ottenere una specie di crema. Unite lo zucchero ai tuorli e con un cucchiaio di legno lavoratelo bene. Senza smettere di mescolare unite poco alla volta la farina. Una volta che lo zucchero si è sciolto unitelo al latte e continuate a mescolare a fuoco basso fino a che la crema non risulti ben densa. Togliete la scorza di limone e fateraffreddare.Pulite le pesche , tagliandole a cubetti e aggiungete i 20 gr di zucchero. Mescolate bene. ATogliete i pezzetti di pesca tenendo però il sugo ottenuto, che vi servirà per inzupparvi i biscotti.(Se ritenete che il succo ricavato non basta aggiungete del succo di frutta con 2 cucchiai di un liquore dolce che gradite). Unite le pesche fatte a pezzetti in precedenza alla crema pasticcera freddata.Prendete 4 bicchieri alti e metteteci un cucchiaio di crema pasticcera sul fondo.Bagnate bene i savoiardi col sugo delle pesche e mettetene 2 per ogni bicchiere.Aggiungete altra crema fino all'orlo del bicchiere e fatelo riposare per un ora in frigo. In una padella sciogliere il burro, unire 2 cucchiai di olio e gettarvi la cipolla e i funghi a rosolare leggermente. Aggiungere il riso e fare insaporire. Bagnare il riso con mezzo bicchiere di spumante secco (o Champagne!), fare evaporare poi coprire con brodo di pollo caldo. Far cuocere, a fuoco medio, per 10 minuti versando man mano altro brodo, se necessario. A questo punto unire al riso i petali di rosa canina (precedentemente lavati), mescolare e proseguire la cottura ancora per 7 o 8 minuti poi spegnere. Tritare 2 o 3 steli di erba cipollina e unirli al riso. Per ultimo incorporare alcune cucchiaiate di panna e di parmigiano. Togliete dal fuoco, aggiungete lo zucchero, versatelo in una terrina e quando sarà diventato tiepido, unite i tuorli d'uovo sbattuto con un pizzico di zucchero, gli albumi montati a neve, l'arancia candita tritata. Versate il composto in uno stampo da budino, cosparso di zucchero caramellato e cuocete a bagnomaria in forno a calore moderato per 45 minuti. Lessate i rigatoni in abbondante acqua salata, scolateli al dente e metteteli in una pirofila ben imburrata. Ricopriteli con la besciamella. Cospargete la superficie di formaggio grattugiato e fate gratinare in forno preriscaldato a 180°C per circa 20 minuti.
